Edamame Tortillas

Easy, healthy, and gluten-free. Just place a cup of edamame in boiling water for 8 minutes, remove them from the water and crush them, you can place them in a blender or any chopper that you have access to, and add 1/2 cup of chopped onion,

1/2 cup of chopped cilantro, and 4 cloves of garlic. Everything should be well mixed.

Place that mixture in a bowl and add 1/4 cup instant grits, and 1/3 cup instant oats, a pinch of salt, and a pinch of pepper. Mix well and if it's too dry to make a ball of dough, you add cold water until you have a softer ball that you can separate into 4 or 6.

Then, on a plastic film, press one of the balls in the form of tortillas, round and not too thin because it can break. You can place it over medium-low heat in Copal or Budare, or a non-stick pan, cook well both sides, and ready to eat. Add in the top any cheese or meat you want to eat. Enjoy.
